In this recipe we used Chillies and sweet peppers grown in our Hydro Systems.
Ingredients (serves two)
4 big potatoes thinly sliced
1 green bell pepper cut into thick strips
1 onion, roughly chopped
2 guindilla verde chilli peppers sliced (any medium hot chilli would do!)
Red wine vinegar
Lots of olive oil
Heat the oil in a large frying pan or wok.
Fry the potato slices for 5 minutes, turning occasionally.
Reduce the heat and put a lid on the pan for 10 minutes.
Add green pepper, onion and guindilla to the pan and give everything a good stir. Cover and gently fry for 10 minutes more.
Check from time to time to make sure that they are not sticking too much. One minute before serving add a splash of red wine vinegar to taste. Serve in bowls.
