Soft and spicy. Perfect for a halloween party! Makes plenty of biscuits to share.

125g butter, softened
200g caster sugar
A few drops vanilla extract
1 egg, beaten
200g pumpkin puree
300g Self raising flour
1 ½ tsp baking powder
100g chopped pecan nuts
1 teaspoon ground cinnamon
1tsp ground ginger
Pinch of salt
Zest of 1 orange


Preheat the oven to 190°C. Lightly grease a baking tray.

Blend the butter and castor sugar until light and fluffy. Add the beaten egg.
Stir in the flour, baking powder, spices, zest, vanilla, pecan nuts and pumpkin puree.

Drop teaspoons of mixture onto a prepared baking tray and bake for 10-12mins.
