Sweet Chilli Pork with Banana and Pineapple

1 tbsp vegetable oil
1 sliced red onion
2 sliced red peppers
1 tbsp sweet chilli sauce
1 tbsp water
2 tsp sugar
2 tsp white wine vinegar
125g (5oz) fresh cubed pineapple
2 firm sliced bananas
5 coriander sprigs
2 tbsp desiccated coconut
2 cups plain rice

1.Mix the pork with the salt, pepper and corn flour and marinate in the fridge for at least 20 minutes.
2. Heat the oil in a wok or frying pan and add the pork
3. Stir-fry over a high heat until the pork browns, it will take about 5 minutes.
4. Add the pepper and onion to the pork and cook for another 5 minutes
5. Stir in the sweet chilli sauce, water, sugar and white wine vinegar
6. Simmer for a couple of minutes and then add the pineapple, banana and coriander and mix everything together
7. Boil the rice, toast the coconut under the grill until golden brown, then mix together and serve with the sweet chilli pork
