New Salad Potatoes
1. Cook new salad potatoes (with skins on) and sweet potato (peeled). Until soft.
2. Add 2 spoons of Ricotta cheese, Salt and Pepper, and crush. Don't mash or cream them.
You want the mixture to have a variety of textures (smooth, soft with a little bite).
There probably won't be any left over, but it also makes great potato cakes.
