In this recipe we used chillies, papaya, french beans & tomatoes, grown in our Hydro Systems.
1 dsp chopped garlic
3 fresh green chillies
1 large unripe papaya
6 fresh green beans, cut into short lengths
2 tomatoes, chopped
2 tblsp fish sauce
1½ limes, juice of
1 tsp dark brown sugar
2 tblsp peanuts
Cube the papaya and place in a large bowl.
Add the chopped tomatoes and green beans.
Finely chop the garlic and chillies and add the bowl.
Sprinkle over the peanuts.
Mix the lime juice, fish sauce and brown sugar in a separate bowl. Pour it over the salad and stir it all together.
The salad was served on a platter and garnished with lime wedges and a sprig of coriander. Delicious!
