If sowing indoors sow the seeds 0.5cm deep in small pots of compost, watered well, and placed in a warm position. A temperature of 15-20°C (60-68°F) is ideal. When seedlings are large enough to be handled transplant them to individual 8cm (3") pots or your final herb pot or planter.
If you want to move the herbs outdoors gradually accustom them to the cooler weather by bringing them indoors during the night for a few days.
If sowing outdoors sow into warm, well-drained soil, which has already been watered. Sow 0.5cm deep. Thin the plants to 20 – 25cm (8-10").
Herb Basil Sweet (Ocimum basilicum)
This very popular basil variety has large sweet leaves and is used in a huge range of Mediterranean dishes. Sow and grow indoors all year or sow outdoors in March to May. Seedlings usually appear in 7-28 days.
Thyme (Thymus vulgaris)
This classic strongly-flavoured herb has a wonderful unique flavour and is ideal with meat, fish and eggs. Sow indoors all year or sow outdoors from Feb to May. Seedlings usually appear in 14-28 days. If growing outdoors protect the plant with a cloche in autumn to allow picking into winter. Cut off the flowering shoots to retain the best flavour. Thyme can be dried for storage and use throughout winter.
Herb Coriander Cilantro for Leaf (Coriandrum sativum)
This variety produces lots of large leaves and is delicious for salads, Mexican, Mediterranean and Thai dishes. Sow indoors all year, or sow outdoors from March to June. Seedlings usually appear in 14-21 days. You can dry or freeze coriander for use throughout the winter.
Remember to use the herbs often to encourage the plants to regrow quickly. For a continuous supply of basil and coriander sow a few of the seeds 2-3 weeks apart.
