Classic mint sauce with a twist

1 generous cup of finely chopped mint leaves. Try using applemint, pineapple mint or, for a really rich flavour, black peppermint. Of course garden mint is very tasty too.
200ml cider vinegar
100ml cider, I am a huge fan of scrumpy, but you can use any good flavoured cider.
1 large apple, peeled, cored and grated or finely chopped.  Choose a good flavoured, crisp variety such as Braeburn or Greensleeves.
100g Light Brown Sugar.
½ tsp salt

In a medium saucepan dissolve the sugar in the cider and cider vinegar. Add the apple and salt, and bring to a simmer.
Simmer for 5-7mins until the liquid has begun to reduce.
Remove from the heat and stir in the mint leaves.
Leave to cool and then bottle in sterile jars or serve with a tasty lamb dish like Kleftiko or your favourite roast dinner.

Alternatively, add 1 tsp to a 250ml tumbler with ½ tsp salt, 50ml natural yoghurt and top it up with soda water. Stir well and enjoy.
