1) Peel the ginger ginger and cut into 6/7mm slices
2) Place the ginger slices into a heavy pan and just cover with water
3) simmer for about 20 minutes until the ginger is softish
4) Add sugar bring to boil, then take off heat , and leave overnight
5) repeat this process over 4 days until the ginger is translucent
6) Drain the syrup from the ginger
7) roll your ginger in castor sugar and it is ready to serve. Fantastic for those cold winter days.
